DWN Craft Chocolatier earns bronze for Old Fashioned dark chocolate bar

In a virtual awards ceremony that took place in New York City on Sept. 3, 2022, DWN Craft Chocolatier won bronze at the 2021-2022 International Chocolate Awards Americas Bean-to-Bar and Craft Chocolatier Competition.

The winning entry was the Old Fashioned dark chocolate bar in the category of dark chocolate bars with an infusion or flavouring.

The Old Fashioned chocolate bar is made by infusing cocoa nibs with BarChef’s Toasted Old Fashioned maple whisky cocktail for a week before grinding the nibs into a 60 per cent dark chocolate. Once the bar is cast into the chocolate mould, it is finished with a sprinkle of sea buckthorn-infused sugar.

“Traditionally an Old Fashioned cocktail is garnished with a twist of orange,” says DWN owner Dawn Nita, “but DWN tries to use as many Canadian ingredients as possible, so we substituted the orange for sea buckthorn, which is a berry that grows native to Canada and has a tart, citrus flavour.”

Founded in 2012, the International Chocolate Awards is an independent competition recognizing excellence in fine chocolate making and in the products made with fine chocolate. As the world’s only fully independent international fine chocolate competition, their aim is to support companies producing fine chocolate and chocolatiers, small companies and artisans working with fine chocolate.

As a winner of the regional Americas competition, the Old Fashioned chocolate bar qualifies for entrance at the World Final, which celebrates the best entries of the year.

In a video played during the ceremony, Nita states that “winning this award is really important to me because I consider the International Chocolate Awards to be the Oscars of chocolate making, so it is super-rewarding to be recognized by my peers.”

DWN creates small-batch handcrafted chocolate bars and confections using local, natural and carefully selected ingredients. DWN incorporates the fundamentals of bean-to-bar chocolate making with the whimsical colour and flavour combinations of fine chocolate bonbons to create flavours that are fun, comforting and familiar.
